200 Grams of fine dark chocolate.
30 Grams of unsalted soft butter.
3 Separated eggs.
300 ml. of sweet cream or whipped cream.
Melt the chocolate in a microwave. (lay the chocolate on a plate for 20 seconds).
Take out of the microwave and mix, put back for another 20 seconds until the chocolate is completely melted.
Make sure no water mixes with the chocolate.
Add the butter and mix together until a complete melt.
Separate 3 eggs.
Add an egg yolk and keep mixing.
Add the second yolk and mix thoroughly before adding the last yolk.
Make sure the chocolate is cooled down before adding the eggs so that they will not cook.
In a separate bowl, whip 3 eggs into a thick cream with a bit of salt.
Whip the cream until reaching a thick cream.
Pour the egg cream into the whipped cream.
Once both creams are mixed together, start adding 1 tablespoon of the chocolate sauce, pour each tablespoon of chocolate gently inside so you don't break the cream.
Once the chocolate is properly mixed, pour the mousse into serving glasses, put in the freezer for at least 2 hours.
Take out the mousse 5 minutes before serving so that the mousse thaws out.
You may use fruit or nuts as decoration.Enjoy!
