PLAIN ORANGE CAKE

Ingredients
a. 100g butter
b. 100g sugar
c. Grated rind of 1 orange
d. 2 eggs beaten
e. 1502g flour
f. Pinch of salt
g. 1 tsp baking powder
h. Juice of 1/2 an orange

Method
1. Cream the butter and sugar until light and fluffy.
2. Add the grated orange rind.
3. Beat the eggs lightly together and add to the mixture.
4. Sift together the flour, salt and baking powder.
5. Add to the mixture alternately with the orange juice, begining and ending with the flour, mixing well.
6. Spoon into a paper-lined and greased 20cm ring tin and bake for 50-60mins at 180C. Ice when cold with orange icing, made with the juice of the remaining half an orange.

COLESLAW WITH APPLES

Ingredients
1. 250g white cabbage
2. 125g carrots
3. 2 red apples, cored
4. 4 tbsp. of mayonnaise
5. A pinch of nutmeg
6. Salt & pepper

Method
Shred cabbage, carrots and apples finely. Combine with the rest of the ingredients. Leave for about 45 minutes. Serve chilled.

The Early Booster

Ingredients
1 cup papaya juice
1/2 cup fresh milk
2 tsp. honey

Method
Blend all ingredients in a liquidiser and serve chilled.

Few of my recipes which I had in the laptop.


KEERAI VADAI

Ingredients:

1 cup urad dal
cup chana dal
3 green chillies chopped
   chopped onions
tsp cumin seeds
1 cup chopped any keerai
1 tsp finely chopped curry leaves
1 tbs finely chopped coriander leaves
Salt to taste
Oil

Method:
Soak the two dals for 1 hour.
Drain and grind to a nice paste without adding much water.
Now add all the other ingredients and mix well.
Heat oil in a wok, take a small ball of the vadai dough.
Flatten to make vadais, pierce centre with finger and slowly
Drop the vadais in the oil. Fry on medium heat till done.
Serve hot with chutneys or chillie sauce.

Strawberry Cup Cake

Ingredients :-

Self raising flour – 200 gms
Baking powder – 2 tsp
Unsalted butter, softened – 200 gms
Eggs – 4
Golden castor sugar – 200 gms
Milk – 3 tbsp
Orange zest of 1 medium orange
Strawberries, lightly crushed – 150 gms
Ground almonds – 50 gms, plus extra to decorate,
Orange juice of 1 medium orange
Golden castor sugar -4 tbsp


Heat oven to 180 C. Line a muffin tin with paper muffin cases.
Put all the ingredients required for the cake except the strawberries into a large bowl and beat until smooth.
Fold the crushed strawberry through the batter.
Divide the batter between the cases(they should be about half full) and bake for 20-25 minutes or until golden and just firm.
Make the topping by mixing together the orange juice and the sugar until well blended.
Take the cakes out of the oven and allow it cool a little.
Drizzle each with the orange and the sugar crush mix.

HOT CROSS BUNS

Ingredients
600g bread flour
100g butter
100g castor sugar
1 egg
1 tsp dry yeast
200ml warm milk
a pinch of salt
125g raisins
25g mixed peels

Paste for Cross:
100g flour
50ml warm water
1 tbsp oil

Method
Cream butter and sugar until pale and gently fold in the flour to form soft dough. Blend yeast with a little warm milk. Add egg, milk, yeast mixture to the dough and knead thoroughly. Cover the dough with a cloth and let it rest for 1/2 hour.

Add the raisins and mixed peel to the dough and knead again. Divide the dough and shape them into small buns. Set aside and let it rise till double the size.

Prepare the paste for cross.
Mix all ingredients together and roll out into a flat sheet. Cut into strips.

Glaze buns with beaten eggs and mark each one with a cross. Bake in an oven with a temp. of 250C for about 30 minutes or until the buns are golden brown.

This is one of my fav desserts....
 
Mango Yogurt
 
Large carton of natural yogurt, 4 oz caster sugar, 8 oz mango pulp & 1/2 teaspoon cardamom.
 
Whisk the yogurt and sugar together until smooth. Strain this mixture through a muslin cloth to allow liquid to drain off. Put the yogurt in a large bowl.  Then strain mango pulp though muslin cloth. Add the drain pulp to the yogurt with the cardamom.  Cover and chill in the fridge.  Later serve with sliced pistachio nuts.
