Amul Junior Masterchef Swaad Ke Ustaad Recipes

Kokum ke saath dahi ke Kabab Karari Mathri ke Saath Lassi


For the Dahi Kebab:

250g - Hung Curd
75g - Amul Paneer (Cottage Cheese)
4 tsp - Bhuna Channa (Roasted Bengal Gram) Powder
1 tbsp - Lal Mirch (Red Chili) Powder
tsp - Dalchini (Cinnamon) Powder
tsp - Laung (Clove) Powder
tsp - Elaichi (Green Cardamom) Powder
3 tsp - Mixed Nuts, roasted and chopped
1 tsp - Hara Dhanya (Fresh Coriander), chopped
1 tsp - Adrak (Ginger), chopped
1 tsp - Hari Mirch (Green Chilies), chopped
cup - Oil

For the Mathri:

1 cup - Maida (Refined Flour)
1 tbsp - Oil
1 tbsp - Kasuri Methi (Dried Fenugreek Leaves)
tsp - Dalchini (Cinnamon) Powder

For the Kokum Dip:

1 cup - Amul Dahi (Curd)
1/4 cup - Kokum
1 tsp - Lal Mirch (Chili) Powder
1 tsp - Jeera (Cumin) Powder
To  Taste - Salt

For the Strawberry Lassi:

1 cup - Amul Dahi (Curd)
cup - Amul Taaza Milk
10 - 15 - Strawberries
3 tsp - Castor Sugar


1. To make the Dahi Kabab: In a bowl, take maida , bhuna channa powder, mashed Amul paneer, hung curd, lal mirch powder, dalchini powder, laung powder and elaichi powder  and mix well.
2. For the filling, combine chopped nuts, hari mirch, hung curd, chopped hara dhanya, chopped adrak and season with salt.
3. Divide the mashed Amul paneer mixture into equally sized balls and the nuts mixture into equal parts.
4. Take a paneer ball palm, make a small depression, place the nut mixture in the hole and seal. 
5. Repeat the same process with rest of the paneer and nut mixture .
6. Heat oil in a pan and shallow fry the stuffed patty. Drain and set aside .
7. To make the Kokum Dip: Boil kokum and run it through a sieve to extract the pulp.
8. Beat together the Amul dahi, lal mirch powder, jeera powder and kokum pulp .
9. To make the mathri: In a bowl combine maida, dalchini powder, kasuri methi and oil and knead well
10. Adding a little water if required, but your dough should be stiff.
11. Roll out the dough and using a round cutter make roundels.
12. Deepfry the roundels until golden brown and drain.
13. To make the Strawberry lassi: blend together strawberry, Amul Dahi, Amul Milk and sugar.
14. Pour into a glass and chill.
15. To serve, place the kebab on the mathri and serve the kokum dip in a chutney bowl.

Can someone tell me name of the dish which was Khyati made for audition and chef kunal liked it verymuch.
and also the reeceipe of the dish.
