Pankhudi and Shivam don't really have a relationship - she isn't interested in him. I think Adi is saying "boring" to mean traditional, not modern.

For someone who doesn't actually appear to do any work as such, I don't think Adi can call anybody boring

Yup you heard it right, Adi meant boring as they never made good use of their movie-date & opted for going to a temple instead. So, he might have been thinking like that.
