Cottage cheese veggie dip

1/2 cup low-fat cottage cheese

1/4 teaspoon lemon pepper

1/2 cup each baby carrots and peas

Method

Combine cottage cheese and lemon pepper. Serve with carrots and peas.

Makes 1 serving of dip.

Black bean soup

1 Tbsp. canola oil
1 small onion, chopped
1 Tbsp. chili powder
1 tsp. ground cumin
2 15-ounce cans black beans, rinsed
3 cups water
1/2 cup prepared salsa
1/4 tsp. salt
1 Tbsp. lime juice
4 Tbsp. reduced-fat sour cream (optional)

Heat oil in a large saucepan over medium heat. Add onion and cook, stirring, until beginning to soften, 2 to 3 minutes. Add chili powder and cumin and cook, stirring, 1 minute more. Add beans, water, salsa and salt. Bring to a boil; reduce heat and simmer 10 minutes. Remove from the heat and stir in lime juice.

Transfer half the soup to a blender and puree (use caution with when pureeing hot liquids). Stir the puree back into the saucepan. Serve soup garnished with sour cream, if desired.

Baked chicken with pears

8 4-oz. boneless, skinless chicken breasts
1 tsp. tarragon
1 Tbsp. olive oil (divided)
4 medium sweet onions, thinly sliced
4 pears, seeded and thinly sliced
1 cup low-fat feta cheese crumbles

Method

Preheat oven to 375 degrees. Rub each chicken breast with tarragon. In a large, ovenproof skillet, heat 1/2 tablespoon olive oil and cook chicken 2 to 3 minutes a side until lightly golden. Add remaining oil and sliced onion and continue to cook until onions are translucent. Lightly cover the skillet with foil. Place skillet in oven and bake chicken and onions about 15 minutes. Chicken should reach 165 degrees when tested with a meat thermometer. Remove from oven. Let rest (still covered) about 5 minutes before serving.

Plate chicken as follows: Make a bed of cooked onion, place chicken on top. Arrange pear slices on and around chicken. Sprinkle each with 2 tablespoons feta.

Vanilla maple french toast with raspberry sauce
Vegetarian option

1 whole egg plus 2 egg whites
1 tsp. maple syrup
1/4 tsp. vanilla extract
2 slices whole-grain bread
Cooking spray
1/4 cup frozen unsweetened raspberries,
1 tsp. fresh lemon juice

Method

Whisk eggs with maple syrup and vanilla. Dip bread into egg. Spray skillet with cooking spray and cook dipped bread for 3-4 minutes on each side, until golden. Mash raspberries with lemon juice and pour on french toast.

Black bean taco salad

3 cups Romaine lettuce, shredded
1/2 cup tomatoes, diced
1/2 cup green peppers, diced
3/4 cup canned black beans, rinsed and drained
4 tbsp salsa
1 ounce tortilla chips, crushed (about 12)
2 tbsp shredded low-fat cheddar cheese

Toss lettuce, tomatoes, peppers and beans with salsa. Top with chips and cheese.

Pizza popcorn
Vegetarian option

100-calorie pack of microwave popcorn
2 Tbsp. grated Parmesan cheese
1 tsp. oregano

Pop popcorn in microwave. Empty into medium bowl and top with oregano and cheese.

Chocolate pudding

Fat-free chocolate pudding (4 ounces)
1 Tbsp chopped peanuts

Sprinkle nuts on top of a pudding cup for added texture.
